Here’s a simple and tasty bean salad recipe that’s nutritious and full of flavor!

Bean Salad

Ingredients:

  • 1 can (15 oz) black beans, rinsed and drained
  • 1 can (15 oz) kidney beans, rinsed and drained
  • 1 can (15 oz) garbanzo beans (chickpeas), rinsed and drained
  • 1 cup cherry tomatoes, halved
  • 1 bell pepper (any color), chopped
  • 1/2 red onion, finely chopped
  • 1/4 cup fresh parsley or cilantro, chopped
  • Optional: 1/2 cup corn (fresh, frozen, or canned)

For the Dressing:

  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar (or apple cider vinegar)
  • 1 teaspoon Dijon mustard
  • 1 garlic clove, minced
  • Salt and pepper to taste

Instructions:

  1. Prepare the Salad:

    • In a large bowl, combine the black beans, kidney beans, garbanzo beans, cherry tomatoes, bell pepper, red onion, and parsley (or cilantro). If using, add the corn.
  2. Make the Dressing:

    • In a small bowl, whisk together the olive oil, vinegar, Dijon mustard, minced garlic, salt, and pepper.
  3. Combine Ingredients:

    • Pour the dressing over the bean salad and toss gently to coat all the ingredients.
  4. Serve:

    • Let the salad sit for about 15-30 minutes to allow the flavors to meld. Serve chilled or at room temperature.
